XO sauce with scallop is a spicy seafood sauce originally from Hong Kong. Unlike many other brands, Way On’s XO sauce actually contains scallop giving it a richer flavour. The umami-packed flavours of dried scallops work beautifully served alongside tofu or stirred through a bowl of noodles. Or serve with pan-fried scallops on a bed of stir-fried Chinese broccoli and cabbage.
Despite not containing any cognac, XO sauce was named after XO or extra-old cognac which was very popular in Hong Kong in the 1980s when the sauce was first developed. XO was chosen as a name because of its association with high-quality and prestige.Â
