Neri ume is a thick paste made from pickled Japanese plums – also known as Chinese plums, Japanese apricots, or umeboshi. The paste is rich, sour and salty, and is one of Japan’s most loved flavours. You can even use the plum paste in sour cocktails– mix with shochu or sake and sparkling water for a refreshing Japanese inspired cocktail.
