The natural acidity of Hershey’s cocoa powder, means that it reacts well with alkali products such as baking powder, creating a reaction that causes the sponge to rise. Hershey’s cocoa powder also creates a lighter-coloured sponge with an almost reddish-tint, unlike a sponge made from ‘Dutched’ cocoa powders which is dark the whole way through. That means the cocoa powder is perfect for use in a classic American red velvet cake.Â
