E-Jen brining & fermentation container is a generous sized tub for making kimchi, sauerkraut and pickles. It is used widely in Korea, and incorporates the ancient Korean principle of ‘onggi’ – breathable earthenware.
Like the traditional earthenware, the tub has fine pores which allow for optimum air flow. The plastic is mixed with a natural clay, to create this unique environment. Plus, the inner vacuum lid keeps vegetables and cabbage submerged in pickling liquid, so you no longer need a heavy weight to press the top of your fermenting kimchi or sauerkraut.
